How to Use a Wheat Grinder

Why Grind Your Own Wheat?

Did you know that when you use bleached white flour you lose 40% of the nutrients of the wheat? And the 40% that is removed contains the bran and the germ which are the most nutritious parts of the wheat? Not only that but approximately 30 nutrients are lost during the refinement process. And only a small portion of those are put back in even into "refined white flour". As you can see, the nutritional benefits of eat foods made of whole wheat instead of white flour are huge! But it is very difficult to find foods that are truly made from fresh whole wheat. So what is the solution?

Grind the wheat yourself! This is THE BEST way to get the most nutrients out of your wheat. You can get a hand wheat grinder for as little as $50 or $60, but if you plan to use your wheat on a regular basis it is well worth the money to invest in a high quality electric wheat grinder such as the Wonder Mill. I recently got my Wonder Mill Grain Mill and I use it every single week. One thing to remember though, is that you need to use the flour quickly after grinding it. Within the first 24 hours the flour has lost 40% of it's nutrients and within 72 hours 90% of the nutrients have been destroyed. One way to avoid this is by storing the flour in the freezer once it's been ground.

Using your own whole wheat flour to replace most or all of the white flour in your everyday cooking can be a huge health benefit for you and your family and can also save you a lot of money. Breads, pastas, and even desserts are great uses of whole wheat flour and are way cheaper to make from scratch.

Hard White Wheat

Types of Wheat

Red vs. White

Red wheat tends to have a stronger wheat flavor than white wheat. Red wheats are typically the hard varieties and whites are typically soft. However if you prefer the flavor of one over the other you can find soft red and hard white. Experiment with different varieties in your recipes to find out what works best for you. My personal preference is white wheat.

Hard vs. Soft

Hard varieties have higher gluten (protein) and are better for making breads. Soft varieties have lower protein and nutrients but are better for pastries, pastas, and breakfast cereals.

Spring vs. Winter

Winter wheat has a tiny bit less protein than spring wheat. Winter averages about 12% protein while spring wheat is closer to 14%. The winter wheat is a little harder than spring as well. Red winter wheat is better for baking (breads). There isn't much difference between winter and spring varieties of soft or hard white wheats.

Wow that looks way easier then the huge heavy old grinder I quit using....I might go get one...though I do find organic unbleached flours here at the health food store...Are they not as good though since they are more then likely older then 72 hrs?...

I bake a lot...small pies, breads etc. and am trying to sell them at the coffee places, but being made with the freshest flours would be great...not too sure how much extra work it will be though for this old lady..LOL  Thanks...G-Ma :O) Hugs & Peace

Even organic unbleached flours remove a TON of the nutrients. I use a WonderMill and just grind up about a week or two of flour in five minutes and store it in the freezer right in the canister that I grind it in. SOOOO easy!

Believe it or not, I have a wheat grinder and use it all the time! My dad has become an expert at baking home-made bread, rolls, and pizza. Perhaps someday, I will also have the desire to bake, but for now I let him have the honor. The family loves it when grandpa grinds wheat and bakes bread!

Larry, You can buy whole wheat kernels at emergency preparedness stores or LDS canneries. You can also order them online from sites like http://beprepared.com and http://store.honeyvillegrain.com/

I do agree with you that many nutrients are lost during grinding so it's always advisable to use good quality wheat grinders as you've explained here.
